Chicken Pineapple Quesadillas
- Flavorful fillings (see flavorings)
- 8 oz cooked chicken, shredded
- 14-oz can black beans
- 8 oz pineapple niblets
- 2 green onions, chopped
- 5 oz shredded cheese
- 1 1/2 tsp cumin
- 1 tsp salt
- A few tbsp Vegetable oil for cooking
Mix flavorings in a bowl to make the filling.
Heat ~1 tbsp oil in skillet over medium heat.
Fill each tortilla with 1/2 cup of filling, fold in half to make quesadillas. Cook in skillet, replenishing oil as necssary.
